Se elabora a partir de morralla fresca mallorquina, un producto local y de temporada, compuesto por una mezcla de pescados variados de peque\u00f1o tama\u00f1o. Tradicionalmente, por separado, estos pescados tienen poco valor comercial. Sin embargo, al combinarse, resultan ideales para fre\u00edr o preparar caldos.<\/span><\/p>\n<p><span style=\"font-size: 16px;\">Se obtiene directamente de la lonja de Palma y su uso como materia prima para el fumet aporta, adem\u00e1s de sabor, importantes ventajas medioambientales, ya que se aprovecha el excedente de pescado generado en la lonja y, en consecuencia, se reduce el despilfarro alimentario.<\/span><\/p>\n<p><span style=\"font-size: 16px;\">El proyecto se encuentra actualmente en su fase piloto con el fin de determinar la viabilidad t\u00e9cnica y econ\u00f3mica del producto, as\u00ed como su posterior comercializaci\u00f3n a trav\u00e9s de HORECA. De momento, ya se han realizado las primeras catas con profesionales de ambas \u00e1reas, que han valorado diferentes elaboraciones en funci\u00f3n de la variedad de la materia prima utilizada, el sistema de cocci\u00f3n, el envasado o la conservaci\u00f3n ya que se trata de un producto hecho \u00fanicamente con ingredientes naturales.\u00a0<\/span><\/p>\n<p>Todo el proceso de desarrollo cuenta con la financiaci\u00f3n del Fons de Garantia Agr\u00e0ria i Pesquera del Govern balear (Fogaiba), a trav\u00e9s de los fondos Next Generation de la Uni\u00f3n
