Sabemos que para conseguirlo, es imprescindible poner el foco en el consumo de la prote\u00edna animal y en los residuos procedentes de envases.<\/p>\n<p>La producci\u00f3n de carne est\u00e1 relacionada con importantes impactos ambientales, tales como el cambio clim\u00e1tico, la contaminaci\u00f3n de aguas subterr\u00e1neas, el consumo de agua o la explotaci\u00f3n de la tierra. Por su parte, los envases de un solo uso representan un claro ejemplo de econom\u00eda lineal, por lo que es necesario buscar soluciones m\u00e1s circulares.<\/p>\n<p>Con el fin de reducir el consumo c\u00e1rnico, en 2023 la actividad de Restauraci\u00f3n se fij\u00f3 como objetivo reducir un 20%\u00a0 el consumo, por comensal y a\u00f1o, de carne de vacuno y cerdo. Sin embargo, el resultado a finales de a\u00f1o ha superado las expectativas previstas ya que se ha conseguido reducir un 28% el consumo de carne de vacuno y un 22% el de cerdo. Unos datos que son resultado de la amplia oferta de platos vegetarianos que incluyen todos nuestros caf\u00e9s, y que est\u00e1n elaborados con productos de temporada procedentes de nuestra huerta ecol\u00f3gica.<\/p>\n<p>En cuanto al consumo de envases de un solo uso, en el a\u00f1o 2023 se consigui\u00f3 reducir un 70%, en comparaci\u00f3n con a\u00f1os anteriores, un dato que responde al uso de pajitas de papel y de vajillas de cart\u00f3n para el servicio de catering.
