Durant la seva intervenci\u00f3, Mart\u00ednez va parlar del model de Formaci\u00f3 Dual que impulsa Esment des de fa m\u00e9s de vuit anys i que des d&#8217;aleshores ha perm\u00e8s que m\u00e9s de 400 joves s&#8217;hagin pogut formar a trav\u00e9s de l&#8217;experi\u00e8ncia. Precisament aquesta setmana s&#8217;ha iniciat a Esment Inca el primer curs de Formaci\u00f3 Dual Adaptada en l&#8217;especialitat d&#8217;ajudant de cuina, la primera formaci\u00f3 que es posa en marxa d&#8217;en\u00e7\u00e0 que el centre es va obrir, ara fa un any.<\/p>\n<p>Junt amb el responsable de restauraci\u00f3 d&#8217;Esment Inca, hi van participar V\u00edctor\u00a0<span class=\"hiddenSpellError\">Garc\u00eda<\/span>, director gastron\u00f2mic de l&#8217;Hotel Cap\u00a0<span class=\"hiddenSpellError\">Rocat<\/span> i Xef del r<span class=\"hiddenSpellError\">estaurant<\/span>\u00a0La\u00a0<span class=\"hiddenSpellError\">Fortaleza<\/span>; Caterina Piera,\u00a0xef\u00a0i\u00a0propiet\u00e0ria\u00a0del restaurant i hotel\u00a0<span class=\"hiddenSpellError\">DaiCa<\/span>;\u00a0<span class=\"hiddenSpellError\">Javier<\/span>\u00a0<span class=\"hiddenSpellError\">Pascuet<\/span>, director general de Turisme de l&#8217;Ajuntament de Calvi\u00e0;\u00a0<span class=\"hiddenSpellError\">Luis<\/span>\u00a0<span class=\"hiddenSpellError\">Seminario<\/span>, director d&#8217;Explotaci\u00f3 Grup Torre de Canyamel; Jes\u00fas\u00a0<span class=\"hiddenSpellError\">Cuartero<\/span>,\u00a0director de comunicaci\u00f3\u00a0<span class=\"hiddenSpellError\">Transfer<\/span>\u00a0<span class=\"hiddenSpellError\">Class<\/span>\u00a0i Miguel \u00c1ngel\u00a0<span class=\"hiddenSpellError\">Payeras<\/span>,\u00a0<span class=\"hiddenGrammarError\">Chefs(In<\/span>), com a moderador.\u00a0 Un dels aspectes en qu\u00e8 van coincidir tots els professionals que hi van intervenir \u00e9s que la qualitat gastron\u00f2mica de Balears ha millorat molt en els darrers anys gr\u00e0cies a les escoles i centres de formaci\u00f3 gastron\u00f2mics que s&#8217;han anat creant a les illes.
